An odor comes from the volatilization of a chemical compound, which even at low concentration is detectable by smell.

Organic compounds generate the widest range of odors, and are used extensively for fragrances, etc.   However, some inorganic compounds also generate odors.   Most smells come from compounds, not elements.    Many fragrances are based on organic esters.

So, organic compounds are based on C.   Many compounds based on Nitrogen and Sulfur can be potent.
