What about if linear DNA only had one recognition site and was cut with the restriction enzyme?

it will not give any fragment, it will just linearize the plasmid and we will get linear form on gel...it optimum conditions...

Plasmids are circular pieces of DNA.  If you make one cut in a circle, it becomes linear and would be 1 fragment.

In the case of a linear fragment being cut once, the linear fragment is like a line.  If you cut it once, you get 2 pieces.
