you factor quadratic polynomials in order to figure out where rockets and cannon shells and baseballs come down.  It's all about the parabolic arc a falling object makes due to gravity.

It depends on what you want to do for a career, from nothing to a lot. Business people use a lot of math, and using a polynomial equation can help model different markets. Such as how much one will make if x amount of items sells.
Also they can be used to model physical phenomena. Algebra is really just the basis for whats really important....derivatives and integrals, and other stuff.
