Plants with woody parts are held up by those parts. Plants without the woody parts are held upright by turgor pressure. So, without turgor pressure, the plant could not stay upright.

Turgor pressure keeps the plant rigid so that it doesn't flop over.  Wood makes plants sturdy so that they can get a little dehydrated without falling down.

ie: an oak tree can go through a drought without drooping, because all the wood holds it up.  But the peas in my garden would start to wilt if I didn't water them every day during the summer.
