If we didn't have Amylase in our Saliva what would happen to the process of digestion? Would it still go on normally?

No, not normally, of course not.  Amylase is important for digesting starches (bread, potatoes, pasta, etc.).  Without Amylase, you would have difficulties digesting these things.  Since starches are a staple of the human diet, you would not be able to digest your food "normally."  It WOULD eventually get digested, but not as efficiently.

the amylase in our saliva help in the breaking up of the nutrients in the food. it works with the teeth to break down the food into a better solution for the stomach to squeeze the nutrient solution from the solid part of the food. the amylase in the saliva also helps extract the nutrients into the salivation solution of the food
