Unfortunately, although I love physics, I dont know much about it. How much energy does a large hand crank generator produce with one crank... in joules or nuetons.

Absolutely depends on the generator.
See an example in the first citation.

Generators are rated in Volts. There is no direct conversion to Joules (Newtons are a unit of force). See the second citation.
