Directly from an answer on yahoo by a possible chef:  basically the potato is set into a vise like device, it is spun and as it spin the potato's is run along a shelf and through a spiral cutting die, there are 5-6 spaces, depending on the size you want, and they now have a rippled one to make them wavy, it is done with gentle pressure as is to fast, they break into pieces, and the machine mounts on a sink edge and you fill the sink with water to rinse of the starch, and they cooked like regular chips/fries, a initial oil blanch at 150 d C or 300 d F, then finished in a hot temp fat, they make processed one were after the first cook, they are run through a starch and seasoned coating, to make them appear to have a batter on them.
