Because otherwise the entire organism would be made out of identical, unspecialised cells. A large multicellular organism needs cells which have specific jobs. Brain cells are different in function, structure and morphology to (for instance) liver cells or blood cells. Differentiation is the process whereby a general-purpose, "prototypical" cell (a "stem" cell) adopts its specialised purpose.
