I'm not really sure what you are asking, but I will provide some information that you may find useful,
cell shape and polarity play vital roles in function,
examples being the Gastric mucosa cells lining the stomach which need to be in the correct orientation to protect stomach.
Also this one is really cool, the epithelial cells in the drosophila embryo align and have specific cell polarity during dorsal closure. This happens during the development of the Drosophila embryo, the cells align and take a specific shape. You can read more into this topic by researching Drosal closure.

Source  I did fluorescent staining for proteins that result in cell polarity in epithelial cells in Drosophila during dorsal closure.
