Depending on the conditions, there are several different sets of products for the decomposition of ammonium nitrate.  Under the most severe conditions you get water vapor and the elements.

2NH4NO3 Rightwards Arrow  2N2 + 4H2O + O2

At a slightly elevated temperature you may notice the smell of ammonia, and get
NH4NO3 Rightwards Arrow NH3(g) + HNO3(g)

At higher temperatures you get:
NH4NO3 Rightwards Arrow  N2O + 2H2O
