For most Canadians, food accounts for 80-95% of their contaminants. Any food that is not grown in the environment consumes the food that is grown in the environment. Environmental contaminants can enter the food supply through the water or soil and by deposition from the air onto leaves and fruit. When animals and fish eat these plants, the contaminants bioaccumulate. Additionally, chemicals used in food production and handling can leave residues on food products.
