Toxins can be categorized depending upon the type of cell they bind to; the two primary types of toxins associated with food-borne illness are neurotoxins and enterotoxins. Neurotoxins damage the nervous system, usually causing paralysis, while enterotoxins target the gastrointestinal system and generally cause severe diarrhea and vomiting.
