Explain or demonstrate the correct way to load and carry a small rectangular tray.

The following procedures should be followed when using a rectangular tray:

 Make sure the tray is properly loaded and balanced.

 Slide the tray broad side forward onto the left forearm.

 Hold the upper left arm close to the body.

 Use the right arm to carry a tray stand.

 Once the tray has been brought to the table, properly place the tray on the tray stand and serve the guests.
 When serving guests with the tray in the carrying position, unload it first from one side and then from the other in order to maintain balance.
