What is the basis for inferring infection of a pathogen when a serological EIA is performed? In this context, what does a positive result indicate?

An EIA can measure the titer of a specific antibody using a probe specific to the antibody of interest. A patient's serum should contain antibodies produced by the immune system if they were exposed to a particular pathogen or are currently infected by the pathogen. A positive result on this type of test suggests either situation is probable.
