While glucose is fermented by all enterics, the two main patterns of products formed are called the 2,3-butanediol fermenters and the mixed acid fermenters. Butanediol, ethanol, CO2 and H2 are the primary products of 2,3-butanediol fermentation, and small quantities of acids are also formed. Mixed acid fermentation produces considerably more acetic, lactic, and succinic acids and only small quantities of ethanol, CO2 and H2.
