Why would you need to do this? Why not use room temp water instead? I think I may know the answer to this already, but I need to make sure. I have a lab tomorrow and we will be making aspirin from scratch through a chemical reaction, and this was one of my pre-lab write up questions.

Perhaps the reaction is exothermic so must be cooled to avoid excess heat.
Perhaps one of the reagents has a low boiling point and will evaporate quickly at room temperature.

For an exothermic reaction (heat is released), you might want to control the temperature or it will become too violent. An ice bath would absorb much more heat than room temp water.
