Non-hydrogenated vegetable oils are typically liquid. Hydrogenating them makes them semi-solid at room temperature.

Hydrogenation is the reaction of the vegetable oil with hydrogen. This reaction requires a catalyst which also promotes the conversion of unsaturated fatty acids to trans-unsaturated fatty acids. Trans-unsaturated fatty acids are a risk factor which contributes to hardening of the arteries.
