structural differences:
xylem: made up of: tracheids, vessels, xylem fibres, xylem parenchyma... xylem parenchyma is the only living tissue.
phloem:  made up of: sieve elements, companion cells, phloem parenchyma, phloem fibres...phloem fibres are the only dead tissue.

functional difference:
xylem....water conducting tissues
phloem....food conducting tissues

metabolic differences:
xylem: tracheids are imperforated cells...conduction of water and mineral salts and mechanical support
vessels are perforated cells..conduction and support
fibres...only support
parenchyma....store food reserves and conduction

phloem:sieve elements...sieve cells + sieve tubes...conduction of food...companion cells assist in conduction.
phloem parenchyma store strach and fats.
phloem fibres strengthening and support.
