Pepsin catalyses reactions on peptide bonds formed by amino or carboxyl groups of phenylalanine, tyrosine, glutamic acid, cystine and cysteine with a very rapid rate. For example, in gastric juice it is present as an inactive form called 'pepsinogen'. Pepsinogen takes up hydrogen ion from parietal cells and forms the active enzyme pepsin. It has an optimum pH for activity within 1.5-2.5.
