Say we have two bodies, each traveling towards each other with a speed of LS - 1km/s, where LS = light speed.

Will their combined velocity be 2 * (LS -1), or will it be just LS, because that's the maximum possible speed?

No they would not have a speed greater than the speed of light. Since you are dealing with the speed of light, you must use Special Relativity. If you had give me the mass of each object and what type of collision it was I would be able to tell you the speed of both objects.
