That's hard to say. Any given gene could have any number of alleles. You would have to be more specific on what gene you are asking about.

But as for the cross-pollination, you would get your pea plants to become true-breeding. That means that every single offspring that a certain pea plants will have will retain a certain gene, say the green phenotype. That means that both the parent pea plants are homozygous green. And you know that for a fact.
