I was wondering if I mix beans and vinegar together, what causes the chemical reaction if there is any, and if anything is produced.  Thanks!

I don't think anything much will happen.  There are a lot of proteins in beans, and these proteins can be slowly degraded by a very strong and concentrated acid or base, but vinegar is diluted to 5% so it won't have this effect.

I assume you mean the fact that applying vinegar to beans (and other legumes) reduces their gas-inducing properties.

The reason legumes cause gas is that there is a sugar in the legumes we can't digest. The sugar enters the stomach, bacteria multiplies on it and create gas.

The vinegar simply dissolves some of the sugar, and therefore reduces the amount of gas caused by the beans.
