I'm trying to find out how chewing gum would be packaged at a crime scene, would it go into an ordinary evidence bag or something else?

I don't see why not, since chewing gum left at a crime scene is usually used to determine ABO blood-group antigens of a suspect. Where you place it in a bag or not, close-examinations of the gum would still determine it through certain biochemical analysis.
