Basically Io is the most active one with many erupting volcanoes as seen by Voyager.  It has lakes of sulfur lava and the volcanoes erupt violently constantly changing the satellites surface.

Europa is the smoothest with a layer of ice with grooves probably formed by stress fractures in the tidal pull between Jupiter and the outer satellites.  The layer of ice is about 10 miles deep and probably covers a liquid layer of water (thought to be a possible candidate for bacterial lifeforms or the like.).

Ganymede is a dirty rocky ice covered world with plains, mountains, valleys, and craters.  It is the largest of the satellites and would probably be classified as a dwarf planet if it orbited the Sun instead of Jupiter.

Callisto is the fartherest Galilean satellite from Jupiter and is also rocky ice and large, not as big as Ganymede but larger than the planet Mercury.  It has many craters which appear bright.
