Both crossing over and "independent Assortment" add genetic variation. How is genetic variation important to natural selection and adaptation?

Suppose we lived in a world where things changed a lot over time (crazy idea, I know, but bear with me..).  If everybody had the same set of adaptations that made them work very well in the conditions that prevailed, that would be great, but suppose those conditions changed?  What then (as Peter's Grandfather said to him)?
