hFE is the current gain  (= collector current / base current),  so it's quite important.  You have to be sure to feed enough milliamps into the base, to get the collector to sink enough current for the load.

In an audio amplifier, you usually apply negative feedback to set the gain to some figure of your choice; but this can never be more than the transistor's hFE.
