For example, if Phylum Mollusca is bilaterally symmetrical, does the Class Polyplacophora (under Phylum Mollusca) also have bilateral symmetry?

yes and no

it depends on the characteristic. If we are talking about Symmetry, Germ Layers etc... Than Yes
but some characteristics are used to differentiate classes, those characteristics are less important than the Phylum characteristics.
 
Hard to explain but there are major characteristics and minor ones.
