Denaturation is a permanent change in the shape of a protein caused by heat, acids, bases, heavy metals, alcohol, or other substances. Denaturation results in protein losing its ability to function. It can occur when we digest protein.

Common household examples of protein denaturation include:
•   Stiffening of egg whites when they are whipped
•   Curdling of milk when lemon juice or another acid is added
•   Solidifying of eggs as they cook
