An emulsified sauce is a semi-thick sauce in which an emulsifier holds water or
liquid in suspension in fat or oil. Examples of the emulsifiers are egg yolks, nut
butters, mustard, and fruit and vegetable purees. Common types of emulsified
sauces are mayonnaise, hollandaise sauce, and some creamy salad dressings.
