To be a basic as possible, the sympathetic nervous system is involved in the 'fight or flight' response and the parasympathetic system brings everything back to normal.

Sympathetic NS'Fight or Flight': this is the adrenaline response, involved in heightened psychological arousal and physical readiness for rapid action. Increased heart rate, blood pressure, respiratory rate, dilated pupils, sweating, adrenaline release.

Parasympathetic NS
'Rest and digest': the PNS is in charge of stimulating digestion (the gastrointestinal tract), and slowing down heartrate and resp rate.

They work in opposition to one another.  During a "fight or flight" stress response, for example, the sympathetics stimulate an increase in the heart rate.  When the stress event is over, the parasympathetics function in "repose and repair", restoring the heart rate to normal maintenance level, by acting in opposition to the sympathetic response.
