Barriers to achieving individual goals produce a frustrating condition. When examined, the
working day of a kitchen team member will reveal that not all needs are satisfied fully. Members
may be prevented from reaching a particular goal or objective, or there may be conflicting goals.
Either condition may produce a state of dissatisfaction and tension that prevents a harmonious
team spirit in the kitchen. Frustrated individuals may respond by engaging in disruptive
behavior. Chef supervisors should understand the forces and factors that contribute to tension
and dissatisfaction and deal with them before they affect team focus on quality.
