I heard some people who don't get into Canadian/US medical schools apply to schools in the Caribbean. If I attended med school in the Caribbean and came back to Canada would I be able to practice as a physician and get a job here?

No, they're a joke.  Many of their graduates cannot get residencies in the US and never become licensed doctors.

I've also heard of doctor's in the US who have gotten degrees in the Caribbean. It may be harder to get a residency in the US afterwards, but I wouldn't rule it out all together. There used to be an old joke "What do you call the guy who graduates at the bottom of his class from a third world medical school?" Doctor
