I'm somewhat familiar with the basics of string theory. But,if everything is made up of strings, what are the strings made of?

Nothing, they are the bottom of the pile.  Same as Atoms used to be before they were found to be made up of stuff, and the stuff they're made up of is made up of stuff.  maybe there's no end to it.

or, they could be made of catgut or horse tail.

We really don't know what they are made of.  There is always the argument that since they are the smallest things in the universe, it is irrelevant what they are made from.  But for reasons of not wanting to keep physicist awake at night thinking about it they say that strings are made of energy.

IF they exist, in theory they could be made of nothing...

Reality is they probably dont exist and the scientists are just confused as normal

methinks, the strings are the particles much much smaller than the positrons with specific charge or they must be charged waves.
