Mechanics and Electricity and Magnetism are really hard to keep up with and I am starting to worry I might not be up to minoring in physics.  I feel like the only thing that is saving me is that they are math-based.

If you asking for advise, I can tell you that the MOST important thing is to understand clearly the BASIC PRINCIPLES. Once you got that, things get fairly easy down the road.

Not typically.

Just make sure you have plenty of time set aside specifically for physics. Go to your prof. office hours if you need extra help.

Added:
Things don't get especially theoretical until grad school, but the math will get harder.

I would use present pace as an indicator of future classes as well.
Higher level physics tends to be highly theoretical and continues
to be based on higher and higher levels of mathematics.
