Can I also say that we use crystallization when we want to obtain something that decomposes on heating but we use evaporation to dryness anytime?

additional details reply:   NO.   crys is often used to purify a substance.   with regard to the point about decomposition, most things soluble in water do not have a low decomp temp (meaning that method is not selected over crys to preserve the integrity of the molecule/substance.

in general_ a substance is evaporated to isolate it from the liquid in which it is dissolved.   crys is more of a technique to purify a compound.
