 I know there is the rough endoplasmic reticulum and the smooth but how many are there of each in a cell.

There's always one ER in (each) eucaryotic cell. It's composed of network vesicles and tubules connected to neculear envelope. The extent of ER varies from one type cell to the other, depending on changing metabolic needs.

As noted above, the amount will vary from cell to cell or from time to time in the same cell, but it's really just one network of membranes in each cell.
