GFR is glomerular filtration rate and it is the volume of fluid that filters into Bowman's capsule per unit time. This means that the kidneys filter the entire plasma volume 60 times a day. GFR is influenced by the net filtration pressure and the filtration coefficient.

put simply. GFR is is basically how much fluid your kidneys filter. Kidneys are responsible for filtering all the blood in your body, excreting waste and excess fluid all the time. Your kidneys are so active that they actually circulate 180 liters a day ! crazy right. anyway this filtration happens in something called the glomerulus which is basically an apparatus that forces fluid into the kidneys. So put simply the GFR is used to determine how effective your kidneys are which is pretty important.
