They produce subatomic particles. The total kinetic energy of the two particles just before the collision is 3.2*10^-10 Joules. Why is the total energy after the collision greater than this?

the mass of the particles is converted to energy, so the total energy after collision includes the initial kinetic energy plus the rest mass energy of the particles

The mass of the particles has also been 'converted' into energy during the annihilation, and this is added to the initial kinetic energy.
