And are there any GOOD articles/links etc which explain how this occurs [for the beginner-intermediate?]. Also a site which gives a description of and explains the roles of the different organelles within the cell?

You would be best to pick up an old textbook on anatomy and physiology(A&P) at your library or ask at any college campus. There are whole sections on cell traits and types. Good luck.
