I do a lot of driving and have noticed that there are hugh crops of corn left to just dry and seemingly wither away.  What is it so significant to leave the corn out to dry completely?

The corn that is intended for grain usage is allowed to dry because if it were harvested wet it would mold in the storage bin. In the sun and open air is the best way to dry it. Corn intended for human consumption is harvested fresh and processed the same day.
