I know that independent assortment, crossing over, and random fertilization are what causes variation in different species because you never get the same gene combo, and i can kinda see how, but can someone give me a precise reason why?

All three of the processes you mention result in variation because they mix up the genetic material.

Independent assortment does because alleles that used to be in the same cell will no longer be together;  crossing-over means that genes that used to be together (linked) no longer are; random fertilization means that alleles from the parents will be in new combinations.
