I am on doing coursework for college and i need to know whats the name of the enzyme that yeast uses to break down glucose, sucrose and fructose. But I cant find it anywhere. Can anyone help me please?

the universal enzyme for sucrose breakdown into glucose and fructose is a sucrase..for glucose and fructose enzymes..check here...
