Both are methods of evaluating food quality and should be used together. Sensory evaluation involves evaluation by individuals on a panel with a scoring system based on various characteristics that can be judged using the senses of sight, smell, taste, and sometimes touch. Objective evaluation is the measurement of physical properties of a food by the use of mechanical devices.
