The first crystals that form in fractional crystallization form at very high temperatures.  This allows a lot more cooling time than crystals formed later.  It is the cooling time that ultimately determines that shape of a crystal.  ie: aphanitic, phaneritic, porphyritic...

The long cooling time thus allows the distinct crystal shape to form.

Because they are growing into a liquid that moves out of the way.  The crystals form whatever faces that stabilise them by lowering interfacial energy.

When there are a lot of crystals, new growing crystals are not growing into space but are impinging on other crystals and so have to accommodate themselves to the space available.
