I just did an experiment of using pepsin and HCl to digest protein. The control was using pepsin and HCl only to digest fish samples. The variables included using HCl, pepsin, and an antacid (various brands) to digest the fish sample. The weird thing was is that the antacid solutions actually broke down the fish more than the control reaction. Why is this?

Maybe the HCl concentration is too high?  Pepsin is active at pH 2.5.  Also how do you know the 'fish sample' is actually being broken down by pepsin?
