pepsin is found in the stomach and is used to digest "food".  If the pepsin didnt work in an acidic environment i.e. your stomach, then what is the point of having in your stomach?

Chemically pepsinigen is activated by HCL (stomach acid) Once pepsinigen is exposed to HCL it unfolds, and autocatalyzes itself forming pepsin. Pepsin attacks the N-terminal ends of several  amino acids.   Pepsin also becomes denatured (broken) at a pH~5
