I have digestive adi tables, made of beta pepsin and hydrochloride. I want to know how well they work.
I've tried placing the tablets into a bit of water with some egg white (cooked) and some cheese, to see what happens but I've noticed nothing. I've tried adding vinegar to change the acidity and also heated the mixture up-- still no noticeable effetcs.
?? And suggestions or explanations?

Optimum temp should be about 98F or 37C . Try egg white raw, shaken up with the pepsin and HCl.
Vinegar sounds like a good idea.
Avoid the cheese, because of the fat.
You may need some biuret agent to see if the peptides are present.
The 3 things that enhance an enzyme reaction are small sized particles, concentration of enzyme and proper temp ad pH
