I'm writing a story that features a quantum mechanics professor, and I want to say, "He could talk to you for hours about..." but I'm not sure how to finish that sentence. What obscure concept in quantum mechanics would a professor in the field generally spend a lot of time talking about? Thanks a mil!

While I too do not know anyone in the field, I did stay at a Holiday inn Express last night :>_) To your question. ....He or she could go on forever about the movement of water molecules following Neutron bombardment as it pertains to the Cherenkov effect.
 BYW Cherenkov radiation is electromagnetic radiation emitted when a charged particle passes through an insulator at a speed greater than that of light in the medium. That medium is water and the radiation or energy is what gives water in Reactors and Spent Fuel pools the blue hue.

If you want to extend it, The Copenhagen Interpretation versus The Many Worlds Interpretation. Not obscure but stunningly important to the nature of reality.

Also, - deriving the laws of classical optics from quantum mechanical principals.

Also, - the  delayed choice quantum eraser experiment.
