I'm growing Cress for a school project and have been told to remove the cling film covering them once they have germinated and have seen this on numerous websites.  None of these websites explain why removing the cover is important.  I've been told it will stifle the growth of the plants but I'm not sure how it will do this exactly.  Please don't answer with 'the plants need air'!

What else would you have us say? Removing the clingfilm will allow better air circulation, and remove waste gases and excess transpiration.

The high humidity (air moisture content) of the germinating environment inhibits further transpiration, as does the lack of air flow around the plants. This prevents the plants from taking up more water from the soil and therefore, it stops minerals from being transported up the plant's stem to where it is needed.
