Chewing gum has a lot of sugar in it so it's normal that it tastes sweet. You can do the same experiment with bread, if you chew it long enough it will start to taste sweet. That's because it has starch in it that is chemically altered to glucose when it comes into contact with saliva.

Starch consists of alpha D glucose units afaik.
